Add the water, Worcestershire sauce, black pepper, and salt. Knead gently for two minutes until it turns into dough. If the dough is too soft then add a little more wheat gluten to the dough.
Take small portions of the dough, place them in your palm, and gently roll them into small balls.
Shape as many balls as you can from the dough, ensuring they are evenly sized—not too large or too small. Once shaped, press each ball gently to flatten it into a thick slab.
Steam the seitan slabs using your preferred method. You can use a steaming pot, a steaming basket, or even steam them in the oven. Choose the method that is most convenient for you and ensure the seitan is fully steamed.
Once the seitan is steamed, carefully take it out and prepare for grilling. Use a traditional outdoor grill, a BBQ grill, or a grill pan—whatever you have on hand and find convenient. Preheat the grill to get it ready for cooking.
Coat the steamed seitan chicken generously with BBQ sauce, ensuring each piece is well-covered. Place them on the preheated grill and cook until they develop a beautiful golden color with slight char marks.
Once done, remove them from the grill and brush on another layer of BBQ sauce for extra flavor. Let the seitan rest for an hour before serving to allow the flavors to settle. Enjoy!
